There is something about preparing raw food salads, that sets me up in a good mood. Apart from being nourishing and pretty to look at, I think its because the recipes are simple! A no recipe, recipe in fact!
This salad in particular is so simple to throw together and tastes great!
Citrus fruits all have their unique flavours. Blood oranges have a sweet, tart, almost raspberry flavour that goes very well with thinly sliced raw carrot.
The trick to taking this salad from great to fantastic is to ensure that the citrus fruits you choose are well ripened and the carrots as fresh as possible...
I used blood oranges, black and red carrots.....any variety of carrot or orange would be fine. I drizzled this salad with rice bran syrup. You could sprinkle it with a teaspoon of sugar or use maple syrup if you prefer. I included some lemon zest as I actually like the strong, sour taste.
Finally I decorated this salad with some edible flowers called dianthus. Dianthus flowers come in a variety of pretty and striking colours like pink, purple and dark red. They all have an interesting, strong floral smell and spicy taste.
