Low FODMAP, Orange Juice Jelly Slices
Don't know about you, but the sunshine makes me feel so upbeat and cheery!
If you fancy something cool and sweet, you could try making these jelly orange slices, set in orange skin. No spoons or plates needed!
These orange slices are made from strained orange juice, mixed with a setting agent. A hollowed out orange is used as the mold, but you could use any mold of your choosing!
I used agar agar powder, which is a plant based form of gelatin to make the jelly layers. Beef or pork gelatin works just as well, though I do find that it can be a little bit more 'foamy', creating air bubbles in the layers. If you are using traditional gelatin, I would recommend skimming the surface of juice/gelatin mixture before pouring.
These orange slices are bursting with flavour. The best thing about them is that you can customise the juice flavour and also adjust the sugar content to taste. In order to make the juice, I hollowed out the orange, strained the juice, added a little water plus agar and popped it in the microwave for 45 seconds, until the mixture boiled (to activate the agar).

Grey means that no FODMAP rating exists for the listed ingredient..yet!.
This recipe makes approximately 1 orange (1 orange pictured).
The ratios given in this recipe are 1/4 tsp agar agar powder to roughly 1/3 cup juice. This makes a semi-firm jelly. If you want softer or harder jelly, adjust to your taste.
I'm a big fan of simple recipes that don't need fancy equipment. For this recipe it does help to have a sharp knife or a small spoon to hollow out the orange and a sieve to separate the juice from the pulp..
Make a small opening in the bottom of the orange. Empty out its contents. Set the contents aside.
Rinse the inside of the orange well and gently shake dry.
Sieve the orange contents to separate the orange juice from the pulp. Set the orange juice aside.
Add icing sugar, if using, to the orange juice to taste.
Add 1/4 tsp of agar agar powder and 20 ml water to your juice mixture and stir well.
Heat the orange/agar mixture in the microwave for 30-45 seconds (until it just begins to boil).
Let the mixture cool and thicken slightly (5 mins, depending on the quantity of setting agent used) and pour into the orange. You can use a syringe, or any jug with a small spout.
After another 5 mins, top up the orange mixture in the orange if needed.
Place in the fridge to set, at least 6 hours.
Slice the 'orange' and enjoy!!
