This desert is always very popular at dinner parties because it looks so pretty. Best part is it takes just minutes to throw together!
This no recipe, recipe is a cream free version of Eton Mess. Although you could use coconut cream if you wanted!! It's made up of meringue, fresh berries and topped with home made strawberry sauce. The secret to making this desert taste as good as it looks is the use of organic, super fresh fruit. I chose strawberries, blueberries and raspberries but I encourage you to use whatever fruit is in season and local to you...

For the topping you could use store bought jam (strawberry or raspberry up to 40g) or strawberry sauce, but I discovered that quite a few brands contain ingredients such as high fructose corn syrup. Not tummy friendly at all! I make my own strawberry sauce. The recipe is super simple (as always :-)) but tastes so good!! I've listed it out for you here..
I added some fresh mint leaves, pink dianthus & white viola flowers to my desert. In my opinion, the mint leaves are a must!! The look extra pretty and pack a fresh minty punch which balances out the sweetness of the meringue...will you try making this clean Eton Mess?
